The dough is our obsession. Kneaded each evening, it rests for more than twenty-four hours before being hand-stretched and oven-baked. That long wait is what separates a good pizza from a great one.
Flours, mozzarella, cured meats and cheeses travel straight from Italy or France — chosen from small producers we work with. No shortcuts on flavor.
